Festive Gingerbread Banana Loaf

Celebrate the season with our Festive Gingerbread Banana Loaf – a delightful blend of warm spices and sweet banana, perfect for cosy winter days

Ingredients

2 mashed bananas
-
2 eggs
-
1/4 cup melted coconut oil

1/4 cup Hilltop British Blossom Honey

1/4 cup milk
-
1 cup self raising flour
-
1/2 cup almond flour

2tsp lots of cinnamon
-
1tsp ground ginger
-
1tsp ground mixed spice
Toppings:
-
One banana sliced in half
-
Pumpkin seeds (or other nut/seed of choice!)
Directions
Preheat an oven to 180°C and line your loaf tin with baking paper
In a large bowl, combine the wet ingredients and mix thoroughly.
Then add in the remaining dry ingredients, and fold through until you get a thick smooth batter
Pour this batter into your baking dish, and top with a sliced banana, and some nuts and seeds of your choice
Now it’s time to bake! bake in the oven for 45 mins (at 180°C) until golden brown on top!
And that’s it! leave to cool in the tin for 15 mins, then transfer out of the tin and onto a cooling rack for a further 10 mins
