Fluffy Honey Pancakes

Pancake Day is coming, and we’re bringing the buzz! Light, fluffy, and naturally sweet, thanks to our award-winning Blossom Honey, these pancakes are waiting to be stacked, smothered and devoured.

Ingredients

Yolk mixture

3 egg yolks

2 tbsp full fat milk

1/4 tsp baking powder

4 tbsp flour
Meringue Mix

2 egg whites
-
2 tbsp honey, lightly warmed

1/2 lemon juice only

Pinch of salt

Topping
-
100ml double cream
-
2 tbsp Hilltop Blossom Honey

Fresh fruit
Directions
First, whisk the egg yolk mixture together. Then, put the egg whites into a clean bowl, add the lemon juice and salt, and whisk for 2-3 minutes until it starts to foam up, then pour in the honey and continue whisking until the meringue forms stiff peaks (5 minutes or so).
Fold both mixtures together, then put a non-stick pan on to heat with a drizzle of oil. Once the pan has preheated, turn the heat to low and spoon in one generous dollop for each pancake.
You can then add another dollop on top, depending on how large you want your pancakes to be.
Cover with a lid and leave for 6-8 minutes, then add another little bit of mixture, lid on for 2 minutes, then flip.
Add a few drops of water to the pan and put the lid back on for 6 minutes. Whilst they are cooking, whip your cream with the honey until it just starts to hold its shape.
Serve the pancakes straight away with a good spoonful of honeyed cream and fresh fruit.
