Sweet Blossom Baklava

Crispy filo pastry, crunchy nuts, and sweet honey—homemade baklava at its best.
Ingredients

100g Hilltop Blossom Honey

100g Walnuts

1 Cinnamon stick

2 Cardamom pods

1 packet Filo pastry

40g Melted butter

150g Pistachios

1 Orange, zest and juice
Directions
Brush melted butter over a non stick oven dish, then layer in 4 sheets of filo, buttering each one as you go.
Whizz the pistachios and walnuts together until they form a nice crumb then sprinkle around 3 tbsp over the filo to create a layer, drizzle over honey.
Add 2 more layers of filo, buttering each one, then another layer of nuts and honey.
Repeat until all the filo is used up, but be sure to reserve a couple of tbsp of the nuts for garnish, then score the baklava and put into a preheated 170 oven for 25 minutes.
While it cooks, make the syrup by mixing 60ml water and 80ml honey, then add orange zest and juice, and the cinnamon and cardamom pods.
Bring to a simmer for 5-8 minutes until it is lovely and syrupy then leave to cool.
Once the baklava is golden all over, pour the syrup over the top and leave to cool, before garnishing with the remaining nuts, slicing into squares and drizzling over honey!
