White Chocolate & Honey Pancakes

Treat yourself to fluffy white chocolate & honey pancakes – a sweet and indulgent delight for any time of day.

Ingredients

1 ½ tsp baking powder

1 tsp caster sugar

3 large eggs
-
25g melted butter plus extra for cooking
-
200ml milk
-
Vegetable oil for cooking
-
White chocolate chips
-
Dried cranberries
To serve:

White chocolate buttons

Directions
Mix 200g self-raising flour, 1½ tsp baking powder and 1 tsp caster sugar into a large bowl.
Add 3 large eggs, 25g melted butter and 200ml milk.
Whisk together until smooth then pour into a jug.
Heat a small knob of butter and 1 tsp of oil in a frying pan over a medium heat. When the butter looks frothy, pour in the batter, enough to make 8 small pancakes ( 2 at a time).
Cook the pancakes on one side for about 3 mins. Add a few white chocolate chips and some cranberries.
Flip the pancakes over and cook for a further minute on the other side. Repeat until all the batter is used up.
Serve with some cut comb honey and extra white chocolate and cranberries
